Falafel with chickpeas

Love this fragant spiced falafel recipe! Perfect for lunch in a macro bowl, full of nutrients and protein, all  in one dish!


1 cup of cooked chickpeas (remember to soak them before cooking around 12 hours for better nutrient absorption)

1/2 red onion

1/2 lemon

1 bunch of basil, cilantro and peppermint

Paprika, red pepper flakes, cumin and salt to taste


Place all ingredients in a food processor.

Process all ingredients until blended, leaving chunks of chickpeas for a rougher look.


Make each falafel with a measuring spoon (1 tablespoon).

Place them on parchment paper, add some more paprika and put them in the oven for 20 min.


Serve on a macro bowl with kale, romaine lettuce, almond, oven roasted potatos & plantain chips, red peppers, pickled onion & radish and tahini as a dressing sauce.

Day #20 Spring Green Smoothie

The Spring Green Smoothie is taken from the Vitamix recipe book! Page 27


1/4 cup water

1 1/2 green grapes ( I can´t get organic where I live so I did not use grapes)

1 orange, peeled, halved

1/2 lemon , peeled

1/2 cucumber, cut into chunks

1/2 apple, halved, seeded

1 cup kale, spine removed

1 cup romaine lettuce

1 cup parsley leaves

1 cup of frozen pineapple chunks

2 cups ice cubes



1. Place all ingredients into the vitamix.

2. Select Smoothie program.

Julienne and Serrated Stainless Steel Peeler

I love my Julienne and Serrated Stainless Steel Peeler!

They are one of my best friends at the kitchen!

I use them for salad, carpaccio, ceviche and decorating plates.

They cut so thin that is great for salads as carrots, beets or cucumbers can be cut so thin that are easy to eat and you can impregnate different flavors with salad dressings.


Also you can cut carrots and cucumbers in julienne for sushi!

Day #19 Almond Cookies


This Almond Cookies Recipe is from Vitamix recipe book! Vegan style! ; )


  • 1 1/2 cup whole wheat flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup butter ( I used 1 Tbsp of coconut oil and 1/4 of almon butter)
  • 1 egg ( I used 1 Tbsp of chia seeds and 1 Tbsp lineseed mixed with a bit of hot water)


  • 1 Tbsp milk ( almond milk or cashew milk)
  • 1/2 granulated sugar (I used 2 Tbsp of agave syrup)
  • 1/2 tsp almond extract
  • 1/2 cup silvered almonds


1.Preheat oven 350f ( 180 c)

2. Combine flour, salt and baking soda into a mixing bowl.

3. Place butter, egg, sugar, and milk into vitamix and select variable 1.

4. Slowly increase to variable 3.

5. Add almonds and almond extract through the lid plug opening.

6. Add the mixture into the bowl with the flour, mix with a fork then with your hands and add a bit of water if needed.

7. Portion dough by teaspoon, roll gently into place 1 inch apart on the parchment-lined cookie sheet.

8.Bake for 12 to 15 minutes or until golden brown.

Day #17 Greek Salad Dressing


Made from Vitamix recipe book!


  • 2 large lemons
  • 3/4 extra virgin oil
  • 1 1/2 tsp dried oregano leaves
  • 2 garlic cloves
  • 3/4 tsp granulated sugar ( I did not use any)
  • 1/4 tsp salt
  • 1/3 cup feta cheese ( vegan style- same amount of cashews soaked for 20 min and then chopped into vitamix to get the same texture as feta cheese)
  • 6 kalamata olives


1. Place all ingredients into vitamix, add kalamata olives and chesse at the end.



2. Select variable 1.

Day #16 Bean Burger


Recipe from Vitamix Recipe Book!


  • 1/2 green pepper (I used Red pepper :p all I had in my fridge )
  • 1/4 medium onion (I used red onion, love the taste)
  • 3 garlic cloves
  • 2 15-ounce cans black beans ( I used adzuki beans)
  • 1 tsp italian seasoning
  • 1 tsp dried basil (I added some pesto I had from past recipe from the vitamix 😉 )
  • 2 Tbsp of pizza sauce (natural tomato sauce)
  • 1 1/4 tsp salt
  • 1 egg ( made my own vegan egg-2 Tbsp chia and ground line seeds add a little bit of water until texture of an egg)
  • 1 cup plain breadcrumbs


1. Add into vitamix green pepper and onion , pulse until well chopped.


2. Add into the vitamix half of the beans or more, pizza sauce,garlic,salt, basil and seasonings. Pulse ultil well done.



3. Mix with the rest of the ingredients in a big bowl and start making the burgers with your hands, you can either put them in the oven or on a skillet with a bit of coconut oil.
